Delicious Treats Your Blood Sugar Will Thank You For
I have a confession.
I am not a fan of Halloween. Never have been. *shrugs*
When I was a kid, there was a family on our street who went out of their way to make trick-or-treating one of the scariest experiences ever. Most loved it for the thrill. I did not.
I can only remember trick-or-treating with my best friend once. And I wore an old lion costume that my Mom had in storage for years. So creative huh?
I wish I could say I've grown to love Halloween. Like I've grown to love Pitbull (I can't help it, his music is so catchy). But having kids go door-to-door begging for junk food? I can't get behind that.
In case you're wondering, I do not hand out candy. I turn off the lights and head elsewhere to avoid the kids-begging-for-sugar ritual.
(I know. I sound like Scrooge. But stick with me, but I love Thanksgiving and Christmas!)
So today I thought I'd share with you three simple (because I'm only capable of simple) treat ideas that your blood sugar will thank you for!
1 | Almond Joy
Almond Joys were my third most favorite candy as a kid (Mr. Good Bar was my fave, with Reese's Peanut Butter Cups a close second).
So I'm super happy to have a healthier way to enjoy them still!
Almond Joys
1/3 - 1/2 C raw honey, to taste (my personal preference is to use 1/2 c)
2 to 3 tbsp cocoa powder, to taste (use 2 tbsp with 1/3 c honey or 3 tbsp with 1/2 c honey)
Dash of Celtic sea salt, cinnamon, and vanilla
2 C raw coconut flakes
1 C raw slivered almonds
Mix the first five ingredients well
Then add coconut and almonds. Stir well.
Form into little balls and enjoy!
2 | Homemade Nut Butter
If I were stuck on a dessert (that's a typo, but I'm keeping it) island and I all I had was Almond Butter, I'd die happy. It's my go-to dessert! All I need is a little teaspoon (okay maybe two), and I'm satisfied!
Careful to read labels, though, some brands sneak a lot of junk into it. That's why my favorite almond butter is the self-serve grind at Whole Foods because almonds are the only ingredient in it!
Almond Butter or Walnut Butter or Pecan Butter
1 C raw almonds, ground
¼- ½ C raw honey
Dash of Celtic sea salt, cinnamon, and vanilla
Blend in the blender until smooth.
Feel free to get creative and replace almonds with walnuts, pecans, or other raw nuts.
Add cocoa powder for chocolate butter.
Add raw cacao nibs, Maca powder, and chia seeds for superfoods.
3 | Sunflower Seed Brittle
Who doesn't love brittle?! Give this one a try - it might become this year's holiday staple!
1 C raw sunflower seeds
½ C raw coconut chips
2 tbsp sesame seeds
¼ - ½ C honey
Dash of Celtic sea salt, cinnamon, and vanilla
Mix well.
Bake in the oven for 20-30 min. at 250°F.
Cool and enjoy!
Try one of these treats this week instead of the Halloween candy sitting on your colleagues' desk. Your blood sugar (and everyone else's blood sugar) will thank you for it!
